the beginnings

A fun, bright, family-friendly venture.

In 2021, Saurabh Abrol was making a name for himself as a restaurateur in New Jersey with his growing line of establishments: Le Malt Lounge in Colonia, and Le Malt Royale, a private club in Red Bank.

When his two young daughters asked him for a restaurant they could actually go to, the brainstorming began. Abrol recruited his small-but-dedicated Le Malt team to bring to life something fun, bright, and family-friendly — a celebration of Mexican food and culture, built in New Jersey.

And with that, Meximodo was born.

The Meximodo team's priority has always been authenticity. In April 2023, they flew to Mexico City to go straight to the source.

Executive Chef Antonio Carballo led the crew through the legendary Coyoacan Market, exploring spices, chilies, and ingredients that would shape the menu.

Master Mixologist Carlos Ruiz took the team on a tour through Tequila, Mexico — from agave fields to distilleries. They dined at everything from renowned restaurants to small family-run spots, bringing back a deeper understanding of authentic Mexican food and culture.

November 2023

Metuchen opens its doors

5 Pearl Street, Metuchen. The first Meximodo opened with a ribbon cutting, a packed house, and a tequila wall that would soon make history. Interior design by Celano Design Studio, branding by Tiffany Larson, operations led by Yleana Almonte.

Meximodo was officially verified by Guinness World Records for the world's largest agave spirits collection: 1,033 bottles and counting. Featured on NBC 4 New York, Forbes, CNN, Telemundo, Yahoo, NJ.com, PIX 11, and the New York Post.

Jersey City arrives

25 Christopher Columbus Drive. The second Meximodo opened in Jersey City with 250+ agave spirits, the exclusive Locker Program, The Outdoor Terrace, and the same commitment to authentic cuisine that made Metuchen a hit.

Woman-created, woman-distilled, woman-designed. Mehak Abrol partnered with fourth-generation Master Distiller Iliana Partida to create an organic, additive-free Blanco. Bottle hand-illustrated by Tiffany Larson. Available for $29.
